Nachos are: 1. my favorite food 2. So versatile and open for creativity. A plate of tortilla chips is like a blank canvas ready to be drawn on! Ok I love nachos. Here’s the recipe for tonight.
Bruschetta Chicken Nachos
Cover tortilla chips with choice of cheese and diced chicken and microwave for 20-30 seconds. (I used shredded Italian) then in a bowl, combine diced tomatoes, chopped mint and basil, olive oil, balsamic vinegar, garlic salt and feta cheese. I let mine marinate in the fridge while I went to the gym for better flavor, but it could be used right away. Spread mixture over chips after microwaving. Wah La!
