Ok guys! Here was the menu for tonight, featuring fresh produce from my parent’s garden and peaches from my brothers work. I did not have a recipe for either of these, but that is what makes cooking so much fun! You can just try random things and use flavors/ingredients you know you will like.

1.) Basil Lemon Skillet Pasta

Ingredients>> White and green onions, fresh garlic, juice of one lemon, olive oil, chardonnay, fresh basil, tomatoes, spinach or greens, 1 package of tortellini, frozen Tyson ready grilled chicken (this is just what I use because it’s too convenient not to!) but you can use whatever type of chicken or protein you want!

Directions>> Sautee onions and garlic in olive oil and a splash of chardonnay in skillet while boiling package of tortellini. Also defrost chicken in the microwave if not already defrosted for about 1-2 minutes. Prep produce > dice tomatoes and chop basil, cut lemon in half. Drain tortellini and add to skillet along with chicken, tomatoes, greens and basil. Add additional olive oil, chardonnay and lemon juice to your liking (I used one whole lemon). Also used some additional dried basil, garlic salt and pepper. I liked this because it was light and refreshing, but you could also use a red sauce or creamy white sauce for different versions!

 

2.) Healthy Peach Cobbler 

Ingredients>> Arctic Zero Frozen Desserts (Vanilla Maple) only 150 calories for the entire pint! Pat and I split what was left. Two fresh peaches (chopped), honey, Ginger Almond & Cashew Granola from Trader Joe’s and cinnamon

Directions>> Chop peaches and place in bowl, drizzle with honey to desired sweetness and microwave for 1 minute. Spoon ice cream into separate bowl and top with warm, sweetened peaches, granola cereal and cinnamon. So good, you won’t even be missing the real stuff! Plus the Arctic Zero and granola provide additional fiber you don’t get from most desserts!
