Sweet and Spicy Avocado Couscous Bowl 

Came home with no dinner plan and no time to make one. Looked in the fridge. Scant amount of rotisserie chicken, half avocado in a plastic baggie and leftover couscous from work…yup making a “bowl.” Shredded up what was left of the chicken, added the chopped avocado and couscous which contained raisins and pine nuts. Made a homemade dressing consisting of 1/3 olive oil, 1/3 balsamic vinegar, 1/3 maple syrup to drizzle over top as well as Sriracha sauce and feta cheese (which 99.9% of my meals contain).

  • Provides healthy sources of MACROS
  • Took less than 10 minutes to prepare
  • Used foods that may have gone to waste (I hate waste)

Off to the gym! TGIF is near…..
