Sunday Funday 

Having K9 time with my girl after work today. Prepping a few things for the week! Check out these lasagna Spinach roll ups! So easy. I used low fat cottage cheese and part skim mozzarella to decrease some fat, but otherwise a fairly healthy recipe if you don’t eat the whole pan! All you need is:

1 cup Cottage cheese

2 cups spinach 

1/3 cup mozzarella cheese

1/3 cup parmasean cheese

Garlic, salt, pepper 

8-10 Lasagna noodles

Mix first 5 ingredients. Spread across cooked noodles after dry and cool. Roll noodles, place in pan, cover with more parmasean cheese and spaghetti sauce of choice! Bake at 350 till warm throughout. Yum! I am keeping mine in the fridge for a dinner later this week. Also whipped up some pumpkin dip to snack on with fruit or pretzels. Upcoming dinners:
